Influence of different periods of pre-slaughter fasting on microbiological quality of bullfrog carcasses (Lithobates catesbeianus)

ABSTRACT The aim of this study was to evaluate the influence different periods pre-slaughter fasting (F1: 2 24 hours and F2: 48 72 hours) on counts hygiene indicator microorganisms presence Salmonella spp. in carcasses bullfrogs. Two stages slaughter process were analyzed: after bleeding (A) final cleaning (B). Samples from each period analyzed count (n=30) (n=140). For aerobic mesophilic microorganisms, variation caused a reduction 0.69 log10 CFU / g (P<0.05) F2 when compared F1 at point B slaughter. Coliforms 35º C Escherichia coli showed no differences (P >0.05) between periods. Considering E. coli, it observed that resulted 30% positivity B. spp., results contributed an 11.5% bacteria (P<0.05). Therefore, is concluded positive impact microbiological quality bullfrog carcasses.
